Vegan Coffee Banana Muffins with Chocolate filling
Ready for another super easy recipe?These Muffins are perfect for breakfast or to take with you for a hike day. They are delicious, healthy and they just take a few minutes to be ready to eat. Plus, your kitchen will have a wonderful cinnamon and banana aroma.

Ingredients
Muffins
- 3 ripe Bananas the more ripe the more sweet the muffins will be.
- 180 ml Oat Milk or any from your choice as long as it is unsweetened
- 1 tbsp Coconut Oil melted
- 1 1/2 cups Flour can also be gluten free flour
- 1 cup Chickpea Flour
- 100 gr Granulated Sugar
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1 tbsp instant Coffee Granules
Filling
- 12 tsp Vegan Nutella to fill the muffins. Can also be melted vegan dark Chocolate.
Toppings
- 2 tsp Cinnamon
- 20 gr Flaked Almonds
- 20 gr Coconut flakes
Instructions
- In a large bowl, smash the bananas with a fork until you get a puree.
- Add the milk and the coconut oil and mix well until it is nicely incorporated.
- Add the dry ingredients to the bowl and mix it good with a spatula.
- Fill up each well of the muffins tin with a table spoon of the batter.
- At this point, you can add 1 tsp of the vegan nutella (or melted dark chocolate) in each well.
- Add and cover the nutella with another table spoon of batter.
- Mix the cinnamon powder and the coconut flakes in a small bowl and then add a pinch over each muffin. You can also add the almonds now.
- Bake the muffins for around 16-18 minutes. You can check with a toothpick if they are well baked.
- Let them cool before you remove them from the muffins tin.
Notes
- We don't grease the muffins tin, but you can also lightly do it if you want, but they don't get stuck and we can remove them easily with a knife.
- You can choose another filling of your liking, like peanut or almond butter or something more sweet.
- These muffins taste better warmed, so enjoy them immediatly if possible.
