Spring Risotto with Vegetables and Mushrooms
Spring is here and alongside with it our enthusiasm to cook and try out new recipes. We are both risotto lovers and cooked it already countless times. After some tries, we created our own easy, healthy and tasty vegetable risotto that we are excited to share with you now.

Ingredients
- 1 l water
- 2 tablespoons vegetable bouillon
- 2 tablespoons olive oil
- 1 red onion finely chopped
- 1 cup arborio or carnaroli rice e.g. 250 ml
- 1/2 zucchini finely chopped
- 1/4 red peperoni finely chopped
- 10 g broccoli finely chopped
- white wine as required
- parsley (optional) as a topping
- vegan cheese (optional) to mix with the risotto
- spice (optional) e.g. piri piri sauce
Instructions
Step 1
- Put the water in a small pan until it's boiling and add the vegetable bouillon. Let it cook on a low to medium temperature and stir from time to time.
- Meanwhile you can wash and cut the vegetables until they are finely chopped.
Step 2
- Put the olive oil in a big pan and heat it up. Then add the onion and let it cook for a few minutes while stirring regularly.
- After that you can add the rice and mix it with the onions.
- Add a bit of white or red wine and let it soak in 1-2 minutes.
Step 3
- Add the mushrooms and the peperoni. After 1-2 minutes, cover everything with vegetable bouillon and let it boil for around 5 minutes.
- Then add the broccoli and the zucchini and let it boil again for around 10 minutes.
- Don't forget to add bouillon from time to time so the risotto is constantly covered with enough liquid.
Step 4
- Before you serve the risotto, you can optionally add some vegan cheese and/or spicy sauce for some extra flavour. To top the risotto, you can wash and chop a bit of parsley.
